Abstract

Improving the quality of life of vegetarians through nutrition education Summary: The vegetarian diet has beneficial effects on health, although there is a risk of nutritional deficiencies if it is not well planned. Therefore, this study aimed to promote health and quality of life, prevent nutritional deficiencies in vegetarians, and develop practical skills in students and health professionals. This is a cross-sectional study of adult vegetarians of both sexes. Anthropometric, sociodemographic, and lifestyle data were collected from 476 nutrition consultations performed on 239 vegetarians. Protocols were developed, and symposia and workshops were held. After a nutritional diagnosis, guidelines were developed for each individual. At the first visit, vitamin B12, ferritin, and hemoglobin deficiencies were present in 93%, 37%, and 11%, respectively. After the interventions, most had reduced the deficiency, demonstrating the importance of follow-up for vegetarian individuals.
